
Available on the Terrazza terrace – June, 2023
Ingredients:
- Three sliced pieces of durum bread “ Rustico”
- 60 g Datterino tomatoes
- 2g Basil
- 40g fresh ricotta
- 50 g courgettes sliced
- 1g fresh mint
- 60g goat’s cheese
- 5ml milk
- 60g Parma ham sliced
- Salt & pepper to serve
- Extra virgin olive oil
- Bruschetta and tomatoes basil:
- Grill a slice of bread with a touch of olive oil
- Chop your Datterino tomatoes and put them in a bowl
- Season them with a touch of salt, pepper and extra virgin olive oil. Add freshly chopped basil & mix. Add on top of your bruschetta bread. Use a tip of basil as garnish the final garnish.
- Bruschetta with ricotta and zucchine:
- Grill a slice of bread with a touch of olive oil
- In a bowl, add your ricotta and season with salt & pepper. Add a drizzle of extra virgin olive oil and mix until it forms a creamy texture
- Slice the courgette and grill them, with a touch of olive oil. Once they are grilled on both sides, put them on a tray and top with chopped mint, salt, pepper & extra virgin olive oil
- Spread the ricotta on one side of bruschetta, before adding the grilled courgettes. Use the tip mint as a garnish for the finishing touch.
- Bruschetta with goats’ cheese and Parma ham:
- Grill a slice of bread with a touch of olive oil
- In a bowl, whisk the goat’s cheese with milk, salt, pepper and a touch of extra virgin olive oil
- pread the goats cheese sauce onto one side of the bruschetta. Add 3 slices of Parma ham, and garnish with rocket leaves
Once all bruschetta’s have been made, present on a wooden board or plate.
